
With her blonde pixie cut and indomitable cheerful spirit, Amy Stott embodies the lively energy and buzz of the SoHo dining scene in a big way. Our Service Director, Amy can be seen on any given day flitting between restaurants, catching up with team members, and injecting a joyful spirit to the day’s agenda. Her congenial and innately curious nature means she is happiest when she is learning more about our guests, and doing whatever possible to brighten up their day. Below, find out what keeps her moving and motivated in her “Day In The Life” diary.
8am: Wake up, curtains drawn back with the sunshine pouring in. Then it’s a big cup of coffee before checking my phone and emails from the sofa.
I need a dose of good music in the morning to set my day; I’m currently listening to the Red Hot Chili Peppers’ newest album. I was fortunate enough to see them play live earlier this year, so these tracks give me all the feels to set good intentions for the day.
9am: My boyfriend Jacob (chef at Belon) usually rustles us up something for breakfast; he makes the best scrambled eggs and then it’s time for another dose of caffeine. Coffee is life.
After a shower, it’s time to pick out the day’s outfit. I have a ridiculous number of jackets and suits, in every colour of the rainbow. Today is a bright green suit kind of day; it’s my favourite colour, paired with a simple black top, gold hoop earrings and white Converse shoes.
10am: I’m out the door and headed to SoHo. First stop is a catch-up with the Butter girls. Nat is busy icing cakes and Kate is packing up the morning deliveries for the day ahead.
11am: Kate and I head to our favourite coffee spot, Stazione Novella, to catch up. We talk more about cake and life in general. Kate was one of the first people I met when I moved to Hong Kong.
12pm: The menu at the Team Canteen today is ridiculous! It’s super hard to choose, but I go for Chef Sidhu’s Keema Pau. It’s quite possibly one of my favourite dishes at New Punjab Club and it doesn’t disappoint. I also grab a slice of something sweet from Butter.
1-4pm: This is the time I’m usually in SoHo restaurant meetings. It’s time to set goals with our young leaders for the week ahead. We talk about everything, from new chairs we have in to cocktails, special dishes and upcoming ideas and events. We reflect on the past week and plan for an even better one ahead. We are a tight-knit community in SoHo and it brings me true joy to see our teams cheering each other on.
4-5pm: A quick trip to K11 Musea to see the team at our beautiful new Butter Cake Shop. She’s looking pretty and the cake display is gleaming. The Itty Bitty Banana Cream pies are to die for! Dikshya and the girls are busy serving, so I have a brief chat with them and head back to Central.
5:30pm – Its SHOWTIME. Service is my absolute favourite part of the day. I like to start the evening at The Last Resort; there is a good chance that ‘The Boyband’ will be there. The Boyband is made up of Sandeep, Ben, Dave and Tony – they prop up the bar at The Last Resort most evenings and have become family.
I make my way around SoHo and plan out a route based on guests I have met before and new ones I am yet to meet. I’ve been working in SoHo for the best part of 6 years now and the electricity of this place during the evenings is unbeatable. I like to pay extra special attention to guests’ notes and preferences: What can we create today to make their experiences with us truly memorable?
8-9:30pm: This is the peak of chaos. We love chaos. Time to help turn those tables! I head to Chôm Chôm and assist with running the door and stoop. The team are on fire tonight and the restaurant is packed both inside and out.
10pm: I run into David and Kirstin at Fukuro, a couple that have dined with us a number of times over the past few months and are an absolute pleasure to take care of. I could listen to their stories for hours. I have a genuine curiosity for people and getting to know our guests is so important to me (my Mum says I have always been nosy).
There is something truly special about our Black Sheep hospitality; we welcome total strangers into our community and make moments into memories, and these people end up becoming our friends.
11pm: I head to Messina. The queue of guests is just winding down and the team have smashed it yet again. I have a cheeky scoop of white chocolate and hazelnut, and head out for the evening.
11:30pm: I’m home on the sofa and it’s time to read a couple of chapters before bed. I’m currently reading “Sunshine Warm Sober” by Catherine Gray. It’s been a little over a year since I gave up boozing for good, and I have built up quite a collection of “Quit Lit”.
12am: Jacob comes home and we crawl into bed before getting up tomorrow to do it all over again.
