CHEF TEYA WELCOMES CHEF GIZZY TO HER MAISON

This November, Chef Teya Mikhael of all day Lebanese canteen Maison Libanaise welcomes Chef Gizzy to her kitchen for a vibrant, flavourful feast.

Inspired by the beautiful beaches of Beirut and the shores of Colombo, the pair have come together to create a menu reminiscent of beachside barbecues from their respective homes. Colombo Confit Sardines, packed with umami, are given a Sri Lankan twist by cooking them slowly in chilli oil. Farrouj 65, classic Lebanese charcoal chicken, is amped up with Chicken 65 spices and served with a duo of chutneys, each representing Lebanon and Sri Lanka.

Though both countries are geographically distant, each has rich culinary traditions and bold flavours, emphasising various spices to enhance their dishes. For both chefs, food is an expression of love, and that love is always best enjoyed with community and loved ones.
