Available from 16 to 21 February, highlights include a refreshing Chilled Fish Skin with Chinese celery, cucumber and peanuts; a show-stopping Sichuan Peppercorn Whole Lobster with Australian spiny lobster, chillies and celtuce (48-hour pre-order required); and comforting Steamed Pork Ribs marinated in Pixian chilli bean paste and wrapped in pearl glutinous rice.

Ho Lee Fook | Chef ArChan’s Prosperous Feast
At Ho Lee Fook, Lunar New Year is about reunion and shared joy. Chef ArChan’s Crispy Pork Knuckle, prepared using traditional braising and crisping techniques, symbolises togetherness and happiness around the table. Also on the menu is a modern take on a classic — Wok-Fried “Osmanthus Egg” with Crab Roe, Vegetarian Shark Fin and Steamed Egg White, a dish that wishes you glory and prosperity in the year ahead.

Over at Peng Leng Jeng, the celebration is rooted in old-school flavours and forgotten dishes, perfect for winter gatherings and family meals.
