Grand Majestic Sichuan | A bold trio of Sichuan specialities

At Grand Majestic Sichuan, Chef Theign and her brigade of wok warriors present a bold trio of Sichuan specialities from the Land of Abundance, designed to usher in health, wealth and prosperity. Available from 16 to 21 February, highlights include a refreshing Chilled Fish Skin with Chinese celery, cucumber and peanuts; a show-stopping Sichuan Peppercorn Whole Lobster with Australian spiny lobster, chillies and celtuce (48-hour pre-order required); and comforting Steamed Pork Ribs marinated in Pixian chilli bean paste and wrapped in pearl glutinous rice.

Ho Lee Fook
| Chef ArChan’s Prosperous Feast

At Ho Lee Fook, Lunar New Year is about reunion and shared joy. Chef ArChan’s Crispy Pork Knuckle, prepared using traditional braising and crisping techniques, symbolises togetherness and happiness around the table. Also on the menu is a modern take on a classic — Wok-Fried “Osmanthus Egg” with Crab Roe, Vegetarian Shark Fin and Steamed Egg White, a dish that wishes you glory and prosperity in the year ahead.

Peng Leng Jeng | Nostalgic Winter Treasures

Over at Peng Leng Jeng, the celebration is rooted in old-school flavours and forgotten dishes, perfect for winter gatherings and family meals. From 16 to 28 February, the menu features Snap Peas Stir-Fried with Hong Kong Preserved Meats for household abundance, Sesame Walnut Shrimps to bring laughter and joy, and a warming Coconut Chicken with Pumpkin and Taro Claypot , symbolising gold and silver filling the home.

Le Garçon Saigon | Chef Billy’s Wood-Fired Grilled Suckling Pig

At Le Garçon Saigon, Chef Billy prepares a traditional sharing-style Wood-Fired Grilled Suckling Pig, boasting crackling skin and juicy meat, served with fried mantou, lime pepper, hoisin and red chilli sauces — a centrepiece made for celebration.

Chôm Chôm | Chef Dat’s Bò Kho’s Personal Taste of Tết

Meanwhile, at Chôm Chôm, Chef Dat cooks Bò Kho, a deeply personal dish he enjoys with his family every Tết. The comforting beef stew features rib meat slow-cooked for 12 hours with carrot, lemongrass and coconut, finished with his signature Vietnamese spice blend.
