BUTTER SPREADS TO THE LANDMARK

You heard it here first! In what can only be described as a Christmas miracle, for the first time, our beloved American cake shop, Butter, will have diner-inspired, brick and mortar space, where you can find joy by the slice.

From 1 December (through May 2021), nine of Butter’s most popular cakes and pies will be available from 10am to 8pm, seven days a week at Landmark and just in time for the festive season. Classic American baking, executed with a lot of love (and a lot of butter).

To launch, our pop-up will offer four pies (Apple, Cherry, Banana Cream and Tennessee Whiskey Caramel Pecan, all $80 per slice), five cakes (Triple Chocolate, Carrot, New York Cheesecake, Red Velvet Candy Cane (available mid-December) and Pineapple Upside-down, all $90 per slice) plus a Root Beer Float ($70) and a Strawberry Limeade ($50).

While the whole menu absolutely needs to be worked through one glorious slice at a time, a good place to start would be:

Apple Pie – because what could be more American? Gala apples are lightly cooked in brown sugar, cinnamon and lemon before being baked into an all-butter (no shortening, of course) pie crust, lattice topped with salted caramel piped in between the weave of the crust.

Pineapple Upside-down Cake – a personal favourite of Chef Karys Logue, she has elevated this retro skillet cake, immensely popular from the 1920s through the 1960s, with fresh vanilla beans in a cream cake base made extra fluffy from a mountain of eggs. And rather than the classic canned slices made famous by Dole, she uses a whole fresh pineapple, sliced with Maraschino cherries dotted in the core of the rings for that extra sweet nostalgia.

Root Beer – made from scratch in small batches from 12 different herbs and spices, this is root beer how it used to be. Sassafras and sarsaparilla are the roots that give this drink its name, the rest of the ingredients are a closely guarded secret but all are boiled into a sweet syrup and freshly topped with soda.

When just a slice will not suffice, whole pies and cakes can be pre-ordered 48 hours in advance at the pop-up store. Plus for last-minute celebrations there will be a very limited supply of whole cakes and pies available on the day (strictly first come first served).
