A Touch of Sun for Winter Nights – Soleil En Hiver

Chef Luca Marinelli brings Mediterranean warmth to Bridges Street, inviting guests to share in convivial feasts inspired by the coasts of France and Italy. 

Salon des Refusés, helmed by Chef Luca Marinelli, announces its eagerly awaited festive menu, designed to chase away the winter chill with radiant Cuisine du Soleil and the sharing spirit of the holidays. Echoing the philosophy of Mediterranean hospitality, the restaurant beckons diners to gather around the table for plates that sparkle with seasonal produce and sea-swept flavours. The intimate dining room sets the stage for connection, with seafoam green doors, candlelit velvet banquettes, and elemental coastal touches weaving a sense of escape and warmth on even the coldest nights. 

For December’s festive occasions, Chef Luca presents his special “Menu D’Hiver” chef menu, available on 24–26 December and 31 December. Each day’s menu showcases the finest catch sourced from Hong Kong’s local markets, ensuring peak freshness and quality. 

Appetisers present a marine parade: Gillardeau Oyster crowned with caviar, Iwashi on toast layered with Japanese fruit tomato and Cantabrian anchovy finished with aioli, and the oceanic brightness of Hokkaido uni on toast with seaweed butter and lime. 

Plates invite guests to journey into deeper savour. Delicate raw dishes feature langoustine tartare uplifted with Alba white truffle alongside Bluefin tuna carpaccio dressed with Calabrian chilli oil and confit tomato. For the main event, guests are treated to the heady aroma of Spiny lobster tagliatellecrispy amadai in bouillabaisse with saffron potatoes and rouille, and Ma Yau “alla tuba” accented with brown butter, lemon, and capers, each dish offering bold Mediterranean character. 

To finish, desserts provide a celebratory coda: the refreshing coupe colonel and the signature Torta Aurora. Available on 24, 25, 26 and 31 December.
