INTRODUCING TEAM CANTEEN COMMUNITY DAY

In celebration of International Women’s Day, the female leaders within the our community are joining hands for an all-day, two-part event set to give back to the wider Hong Kong community we consider home. An integral part to the backbone of our hospitality team, these inspirational women have carved out their own paths in the industry and, for many, have become mentors, encouraging future generations towards hospitality excellence. 

On Wednesday, 15 March, these women join hands to do what they love most for the community they call home. For all, working in the fast-paced, dynamic hospitality industry is more than just a day job, it is their passion; cooking meals full of heart that leave guests well-feed and happy and creating memories that last well beyond the moments spent in the dining room. As part of this celebration, the doors to our Team Canteen are opening for one day only, from 12 to 5pm, for the very first Community Day. Chefs Gizzy, Teya, Roberta and Danvee invite you to join as they serve a warm meal from us to everyone in the community in partnership with our friends, Feeding Hong Kong. 

Having crafted dishes close to their hearts for this special occasion, here our chefs let us know what inspired their dishes for the day: 

Chef Gizzy Alesbrook, Head Chef, Hotal Colombo 

I decided to prepare a traditional celebratory dish that my mum used to make. While the recipe has changed slightly as I have made it my own, it is an homage to her and everything she has done for me. A hearty yellow rice dish, with devilled shrimp, cucumber raita and papadum, it is a dish that brings me comfort. International Women’s Day is a chance to recognize all the amazing women there are out there, and for me one of those women is absolutely my mum.

Chef Teya Mikhael, Head Chef, Maison Libanaise 

International Women’s Day is a chance to give recognition to all the brilliant women that have paved the way before us. Back home in Lebanon, this dish was one of my favourites because it was only made on Sundays when the whole family came together. All the women in the family would gather in the kitchen and spend hours preparing. Consisting of rice and beef stuffed vine leaves with labneh on the side, Warak Aarish is a very manual dish, but its story in my family has shaped how I view Lebanese cuisine: it is about people cooking a shared meal together and then sitting down to enjoy their hard work.

Chef Roberta de Sario, Head Chef, Motorino 

My dish is dedicated to all the powerful women out there, but especially my older sister, who was also born on 8 March! This day is a double celebration of how wonderful she is and how much love I have for her. My Gnocchi alla Sorrentina is prepared and presented in all its simplicity – beautiful and delicious. A creamy, rich comfort food, the gnocchi is baked in a small earthenware pan and served hot and covered with tomatoes, mozzarella and parmesan – it is a dish that will surely satisfy.

Chef Danvee Kwok, Chef, Fukuro 

Having grown up in Hong Kong, I am very excited to be part of this opportunity giving back to my home. I try to create dishes that will bring comfort to others, so for this day of giving back I will be preparing a Chicken Adobo, a nod to my mother and Filipino heritage. With braised chicken served in a house-made vinegar-soy sauce and rice, I hope that those who join us enjoy!

In true Team Canteen spirit, every meal is on the house with any proceeds donated on the day going to support Feeding Hong Kong’s mission to battling food scarcity in the city. In the evening, we will be hosting Dinner For A Cause, a charity dinner with an auction with all proceeds benefiting our charity partner.
