HOTAL COLOMBO MARKS SINHALESE NEW YEAR WITH A FESTIVE THALI

To mark Sinhalese New Year, Hotal Colombo presents a festive thali by Head Chef Gisela Alesbrook (Gizzy), bringing together the flavours and spirit of the occasion in a single, generous platter.

Guests are invited to pick one among a selection of five karis, including fish, beef, chicken, dhal and jaffna prawns, and pair it with their choice of staple, from rice to hoppers, roti and paratha. Alongside the mains, a selection of traditional accompaniments rounds out the experience, from bright sambols to crisp bites and cooling sides, finishing with watalappam, a spiced coconut custard sweetened with jaggery.

Rooted in the spirit of sharing, the thali reflects Head Chef Gizzy’s approach to Sri Lankan cooking – generous, balanced and meant to be enjoyed with loved ones.

13 – 15 April, 6pm | Book here.

AN EXPLORATION OF INDIA’S ROYAL BREADS AT PRINCE AND THE PEACOCK

This April, Prince and the Peacock introduces Shahi: Breads of the Royal Kitchens, a limited-time offering that shines a light on one of India’s most essential, yet often understated elements of the table: bread.

Led by Chef Palash, the series draws from the culinary traditions of India’s historic kingdoms, where breads were not merely accompaniments, but expressions of local craft and refinement. Through this exploration, he revisits these traditions with a considered approach, highlighting artisanal flours, time-honoured techniques and the quiet complexity of layered doughs.

Available from mid-April to mid-June, the selection features four breads inspired by different regions. These include the Amritsari Kulcha from Punjab, filled with green peas and fresh herbs; the Seven-Spice Rogani Naan from Kashmir, enriched with a fragrant spice blend and ghee; the saffron-laced Kesari Paratha from Lucknow; and the Choori Paratha, a multi-layered bread finished with cane sugar for a rich, golden finish.

Available from 6 April | Reserve here.

CHÔM CHÔM INTRODUCES THE OTHER BRUNCH

Chôm Chôm presents The Other Brunch, a Saturday offering that moves away from the expected, leaning into bold flavours and a more relaxed, social way of dining.

Designed to be enjoyed at a leisurely pace, the experience begins with a dish for the table: Bun Nem Nuong, a combination of grilled pork sausage, rice vermicelli and mixed salad. The meal then moves into a selection of familiar favourites, from the refreshing Green Mango & Guava Salad with calamansi and black pepper dressing, to the Pho Roll with beef mince, toasted peanuts and nuoc cham. Alongside these are the Crispy Chicken Roll with taro and vegetables, and a Vegetable Roll filled with sautéed mushrooms, tofu and rice noodles, served with Vietnamese peanut sauce.

For those looking to extend the afternoon, guests can opt for two hours of bottomless beer, Prosecco and house wines.

Saturday 25 April, 12pm | Book here
